Cheese Puffs

Ingredients

1 cup cheese, grated
1/4 cup bread crumbs
1 egg, separated
4 tablespoons sugar

Directions

Combine cheese, bread crumbs, egg yolks and seasonings.
Fold in stiffly beaten egg white.
Shape into balls about 3/4-inch in diameter.
Roll in fine bread crumbs.
Fry in deep hot fat until brown.
Drain off excess fat in absorbent paper.
Yield: 2 to 3 dozen puffs.
