Cheesy Cassava Balls

Ingredients

2 cups grated cassave
1/2 cup ube powder
1/2 cup diced cheddar cheese
1 cup coconut cream
2 cups water
1 can condensed milk
1 can whole corn (mais) kernels
2 slightly beaten egg yolks

Directions

1. Mix the cassava and ube powder, and shape it into 1/2 inch (1-1/4 cm) balls. Put a piece of cheese inside each ball.
2. Drop the balls in boiling coconut milk.
3. Wait until the cassava balls start to float, and then turn of the heat. Mix the condensed milk, corn and egg yolks.
4. Serve warm.
