Pinapaitan
Ingredients
1 kg Beef, internal organs (tripe, liver) &lean meat
beef bile
1 onion, chopped
2 cloves garlic, chopped
3 tbsp vinegar or calamnsi
1 ginger, chopped
salt, pepper
Directions
dice beef, add salt; soak liver in vinegar. set aside
saute garlic, onion and ginger in a pan. Add the beef except liver. Add water, simmer. cook until tender. season with salt and pepper, according to taste.
Add liver, simmer until liver is tender. gradually add bile (by drops if u must), add more depending on your taste. boil for a minute.
